Simple vegetable ‘mix’ for any student

I have heard more than enough complaints from college students and  adults about how hard it is to eat good food while keeping up with their busy lives.

I will always sympathize and crave fast food on occasion, but believe some people just haven’t tried cooking a healthy homemade meal.

To spread the word, there’ll be a Cooking Corner in each issue of The  Beacon. Recipies can be submitted to me via FirstClass and I will test them out to make sure they are tasty and almost as easy as your favorite ramen noodle dinner…

Ingredients:
1 green pepper
1 tomato
1 red onion

Directions:
Chop up 1 green pepper, 1 tomato, and 1/2 a red onion.
This simple veggie mix can be kept in the refrigerator for days if kept cold and covered, and can add nutrition and flavor to many easy  Recipies.

 

 

 

 
Here’s how you can use this easy mix:

Omelette–                                                                 Pasta–
Add veggie mix to eggs                                       Add veggie mix to any
with a bit of your favorite                                  pasta with your choice
cheese.                                                                       of tomato or alfredo sauce.

Stir fry–                                                                      Wraps–
Fry veggie mix in a pan                                       Add veggie mix to a
with oil or butter and                                           wrap filled with any
add your choice of any                                        meat and/or cheese.
